Sweet Potato Harvest

Daniel did an awesome job growing sweet potatoes this year. This is part of the harvest from the second bed of potatoes he and Benjamin dug up. They are so delicious. Any favorite sweet potato recipes we should tackle? I love sweet potatoes during cool weather!

    We like to do this one flatbread/pizza with a focaccia base.Slice the sweet potatoes thinly (mandoline works, but we don’t own one) then toss with olive oil, honey, S&P, and red chili flakes (to taste). Put a first layer down of kale, then scallop the sweet potato all over. I think we grated parmesan over the top.

    Oh, I do love your post all about baby Lucy.

    Eleonora is going to be one in a few weeks. I cannot even handle it. It’s all too much!

    We followed the principles of ecological breastfeeding with Bela and Eleonora, and they were definitely more peaceful babies. People couldn’t stop commenting on their cheery attitudes. In fact, and this may sound a bit strange, but I never intended it: Bela just weaned last Sunday. I know! A bit insane. I am so glad to be finished with that, as I’d like to nurse Eleonora for another year or so, without his presence.

    His grandmother said it improved his personality greatly. He was getting to be a bit overly emotional. Although, most 3 year olds are a bit that way.

    Anyhow, congratulations on your sweet girl, and her baptism.

    PS We make sweet potato muffins. And of course, baked sweet potato fries/wedges. Cubed sweet potato in an Indian type curry.

      I’d love to hear more about your experience doing ecological breastfeeding! Especially regarding the return of fertility. We should email. Sweet potato muffins! Great idea!
